Pressure Cooker Recipe - Ingredients
  • 1 1/2 cups cooked beans
  • 1/3 cup finely chopped red onion
  • 2 cups finely chopped fresh plum tomatoes
  • 1 large yellow or red bell pepper, seeded and diced
  • 1 jalapeno pepper
  • 1/2 cup tightly packed minced fresh coriander
  • 1/3 cup freshly squeezed orange juice
  • 3 tbs freshly squeezed lime juice
  • 1 tsp salt, or to taste
  • lettuce or radicchio cups
  • avocado with, sliced or cubed
Pressure Cooker Recipe - Instructions
  1. Seed jalapeno pepper, and thinly slice
  2. In a bowl or storage container, combine all the ingredients except the lettuce and avocado.
  3. Cover and marinate at room temperature for 2 hours, or refrigerate for up to 4 days.
  4. Perk up the flavors by adding more lime juice as needed.
  5. With a slotted spoon, serve in lettuce cups
  6. Garnished with avocado.
